Nel mio immaginario non c’è nes­sun piatto che non possa essere ricondotto a diventare una pizza e, viceversa non c’è nessuna pizza che non possa trasformarsi in un altro piatto. In tante mie elabora­zioni “l’apparenza inganna”: quello che il piatto pare essere non corri­sponde alla realtà che conosciamo ma ne è una rivisitazione, una rie­laborazione divertente oltre che degustativa. Non a caso questo è il menù “experience”: provare per degustare.

“In my imagination, no dish exists that cannot be transformed into a pizza, and vice versa. Likewise, no pizza exists that cannot become another dish. In many of my crea­tions, ‘appearances are deceiving’: what the dish seems to be is not ne­cessarily what we know, but rather a reinterpretation, a playful and gastronomic reinvention. This is why this is the ‘Experience Menu’: try it to taste it.”
